Ingredients
1 whole pumpkin
small roasted or boiled potatoes , to serve
crusty bread , to serve
breadsticks , to serve
chickory leaves, to serve
4 oz. of emmental cheese , grated
4 oz. of gruyere cheese , grated
4 oz. of mature cheddar , grated
1 tbsp. cornflour
1 tsp. of Slocal pumpkin oil
4 oz. of creme fraiche
2 tbsp. of white wine
1 shallot
1 garlic clove, crushed
Instructions
Heat oven to 360f. Start to prepare your pumpkin by cutting off the top and scooping out all the seeds and membranes. Put the top back on and sit the whole pumpkin on a baking tray. Bake for 1 hour.
Mix the grated cheeses with the cornflour until completely coated. Remove the pumpkin from the oven, discard the top and increase the oven to 390F. Layer up the cheese, crème fraîche, white wine, shallot and garlic inside the pumpkin. Lift back into the oven and bake for 30 mins or until the fondue is melted and bubbling. Eat with spoons, scooping out chunks of soft, roasted pumpkin with the melted cheese. For extra taste add a tsp. of Slocal pumpkin oil.
