Ingredients
4 oz. of wholemeal flour
4 oz. of plain flour
2 tap. of baking powder
4 oz. of dark brown sugar
Handfull of pumpkin seeds
Handfull of sultanas
4 oz. of oil
4 bananas, mashed
2 eggs
2 tbsp. of milk
Instructions
Heat the oven to 360F. Line 6 holes of an oiled non-stick muffin tin with squares of greaseproof paper. Mix wholemeal flour, plain flour, 2 tsp. of baking powder, dark brown sugar, a handful each of pumpkin seeds and sultanas. Then add oil, 4 mashed bananas, 2 eggs and 2 tbsp. milk. Fold with a metal spoon.
Divide the mixture between the muffin holes. Fill them to the top, sprinkle on a few extra pumpkin seeds and bake for 20 minutes, or until the muffins are cooked through. Enjoy!
